Apple Pecan Salad

Ingredients

4 c. fresh power greens (spinach, chard, kale)
1 apple, cored and chopped
1/4 c. chopped pecans
1/4 c. dried cranberries (no sugar added)
1/8 c. onion thinly sliced
1 oz vegan goat cheese 

Instructions

  • Toss ingredients in a large bowl until mixed.

  • Add your favorite dressing (I love Vegan Raspberry Dressing) and toss again.

  • Enjoy chilled!
