Vegan Avocado Dressing

Yields: 1 cup

Ingredients

1/2 large avocado
1/4 c. olive oil
1/4 c. water, or more for thinner consistency
2 T. fresh basil (2 tsp. dried)
2 T. fresh parsley (2 tsp. dried)
2 T. fresh lime juice
1 garlic clove, minced
1 tsp. fine sea salt
1 tsp. pepper

Instructions

  • Put all of the ingredients to a blender and blend until creamy.

  • Add more water 1 T. at a time for a thinner consistency.

  • Use as a veggie dip or salad dressing.

  • Can be stored up to two weeks in the fridge.
