Vegan Goat Cheese

Prep Time: 25 min.
Yields: 4-5 servings

Ingredients

7 oz extra firm tofu
1 T. lemon juice
2 tsp. white miso paste
1/2 tsp. tahini
1/2 tsp. fine sea salt

Instructions

  • Press the water out of the tofu. The easiest way to do this is to lay your tofu on a kitchen towel, cover it with another kitchen towel, then place something heavy (such as a pan) on top and press as much of the water from the tofu as you can. Doing this 24 hours in advance (then refrigerating the tofu) yields even better results.

  • Put all of the ingredients in a blender and blend until smooth. You will need to scrape the sides from time to time.

  • While it is edible and usable like this (especially as a spread), to get an even better texture, place the mixture in a oven-safe dish and bake at 360* for 20 minutes until slightly browned.

  • Enjoy as a spread, in salads or however else you like.
