Chewy Gluten Free Vegan Cranberry Power Bars

Yields: 10-12 bars

Ingredients

1 c. water
3/4 c. rolled oats (or oat flour)
3/4 c. packed pitted dates
1/4 c. chia seeds
1/4 c. hemp seeds
1/4 c. raw sunflower seeds
1/4 c. raw pumpkin seeds
1/4 c. raw almonds
1/4 c. dried cranberries, chopped
1 tsp. cinnamon
1/2 tsp. fine sea salt

Instructions

  • Preheat oven to 325F and line a 9-inch square pan with parchment paper

  • Put oats in a blender on the highest speed until a flour forms. (Skip if using oat flour.) Transfer oat flour into a large bowl.

  • Blend water and dates on medium to high speed until they form a smooth paste. If the dates are too firm or your blender has a hard time blending them, soak them for 20 minutes.

  • Add all of the ingredients into the bowl with the oat flour and stir well.

  • Spread the mixture into the pan with a spatula.

  • Bake at 325F for 25 minutes, or until firm. Let cool for 5 minutes. Divide and enjoy!
